Matt Amicucci is the co-founder and VP of R&D at one.bio, a pioneering company that emerged from UC Davis in 2019. At one.bio, Matt leverages his dual expertise in culinary arts and chemistry to lead research and development. His focus is on the discovery, pre-clinical development, scale-up, and commercialization of innovative fiber ingredients that offer proven health benefits without the formulation challenges associated with traditional fibers. Matt’s specialties include analytical platform development, intellectual property strategy, and exploring fiber-microbiome interactions.
